Zucchini

Zucchini and Feta Bake


! Grated Zucchini
1 egg, beaten
50 grams feta crumbled
4 tablespoons s/r flour
Fresh herbs of choice (optional)
Milk to mix approx. ½ cup (depends on how moist the zucchini are)
Salt and pepper
2 tablespoons oil


Mix egg and zucchini together, add herbs and flour, add the milk till the batter is like a pancake mix, and add salt and pepper.  Just before pouring into baking dish add the feta and stir gently in, you don’t want it to break up too much 
In dish heat the oil till smoking and pour batter on.  Bake for 15 minutes or till it has risen and is golden.

Serve with a side salad
